Job Summary

The Chief Steward oversees the stewarding operations at Hay Diner, ensuring high standards of cleanliness, sanitation, and hygiene in all kitchen and back-of-house areas. This role is responsible for managing stewarding staff, maintaining inventory of kitchen equipment and cleaning supplies, ensuring compliance with health and safety standards, and supporting kitchen efficiency through organized workflows. The Chief Steward works closely with the Executive Chef and F&B leadership to ensure seamless kitchen operations.

Key Responsibilities

Lead and supervise the stewarding team to ensure effective day-to-day operations.

Ensure cleanliness and sanitation of all kitchen areas, utensils, and equipment in compliance with food safety standards.

Maintain inventory levels of cleaning supplies, chemicals, and kitchen equipment; ensure proper storage and usage.

Coordinate with Engineering and other departments for maintenance and repair of dishwashing and kitchen equipment.

Train and develop stewarding staff in hygiene protocols, safety procedures, and proper handling of kitchen tools and equipment.

Conduct regular inspections to uphold hygiene and safety standards.

Support kitchen and service teams during peak hours with timely cleaning and restocking.

Prepare and manage duty rosters and manpower scheduling.

Implement waste management practices and sustainability initiatives.

Ensure proper segregation and disposal of kitchen waste.

Job Qualifications

Proven experience as Chief Steward or Stewarding Supervisor in a hotel or restaurant setup.

Strong leadership and organizational skills.

Knowledge of hygiene, sanitation, and food safety standards (e.g., HACCP).

Ability to manage inventory and stewarding budgets.

Hands-on experience with dishwashing equipment and cleaning protocols.

Good communication and coordination skills with kitchen and service teams.

Ability to work in a fast-paced, high-pressure environment.

Willingness to work flexible hours, including weekends and holidays.

Willingness to work in Baguio City.
