• Supervises all F&B staff including room service, beach service, bar service and restaurant service
• Schedules dining times and locations as well as, arranges for any special requests for guests
• Attends to food and service concerns from guests
• Controls on an going basis the following : oQuality Levels of Service.oGuest satisfaction.oSanitation, Cleanliness and Hygiene.oMaterial Supplies and Groceries InventoryoSufficient stocks of all equipment and linen to ensure service requirement are met.
• Ensure that orders are taken, food & beverages are served to customers in a friendly and courteous manner
• Welcomes the customers and escort them to the table
• Endorses the order to the chefs in the kitchen and makes sure that the food reaches the right table
• Recommends wine and other drinks to the customers
• Check that all tables are prepared correctly for each meal, new linens, flow set up and correct cutlery before and after every meal and ensure that all items required for the set up are clean, unspotted and in place.
• Checks tables, public rooms, side stations according to standard
• Ensure all furniture is clean and placed correctly, remove for cleaning if needed or when an emergency arises
• Takes feedback from the customers about the food and check if the latter needs anything
• Performs bi-annual performance appraisals, planning, coaching, counseling, training, job expectations discussion and disciplining of subordinates; and work scheduling of staff.
• Observes and monitors team performance to ensure efficient operations and adherence to the resort's policies and procedures
• Exercises good grooming and impeccable hygiene
• Shall be responsible for the efficient operations of the food and beverage areas of the restaurant and bar.Other Responsibilities :
• Contribute to the TEAM's objective of Excellent Guest Satisfaction with the highest level of Guest service and the most exciting and outstanding "barefoot luxury" experience.
