EDUCATIONAL BACKGROUND:
- Bachelor’s degree in food technology, Food Science, Animal Science, Veterinary Medicine, Microbiology, Biology, Chemical Engineering or related field.
- 8–12 year's total experience in food manufacturing quality assurance.
Postgraduate qualifications are an advantage:
- Master’s degree in food safety, Quality Management, or related discipline
- Formal certifications in food safety systems
WORK EXPERIENCE:
- At least 5 years in poultry or meat processing operations, covering:
- Live bird receiving and slaughter operations
- Evisceration, chilling, cutting, and deboning
- Packaging, blast freezing, and cold storage
- Further processing (marination, coating, forming, cooking, IQF, etc.)
- Minimum 3–5 years in a managerial or supervisory QA role, with:
- Direct responsibility for QA/QC teams
- Authority to stop production due to food safety or quality risks
- Experience working with QSR customers (e.g., Jollibee, McDonald’s, KFC, etc.) is highly preferred.
JOB DESCRIPTION:
· The Quality Manager is responsible for ensuring full compliance of all poultry processing and further processing operations with NMIC regulations, food safety standards, GMP, HACCP, and customer-specific requirements. The role oversees end-to-end quality conformance from live bird receiving through slaughter, dressing, packaging, blasting, cold storage, warehousing, and further processing for QS and institutional customers.
Duties and Responsibilities:
The Quality Manager must have strong working knowledge and hands-on experience in:
Philippine Regulatory Requirements
- NMIC regulations and accreditation requirements
- Meat inspection protocols and documentation
- Product registration, labeling, and traceability
- Handling of NMIC audits, non-conformances, and corrective actions
Food Safety & Quality Systems
- HACCP (mandatory) – development, validation, verification, and reassessment
- GMP & SSOP implementation and enforcement
- Food Safety Management Systems, such as:
- ISO 22000 / FSSC 22000
Customer & Third-Party Audits:
- Preparation for and management of:
- Customer audits (QSR, retail, export)
- Third-party certification audits
- Government inspections
- Root cause analysis, CAPA development, and follow-up closure
Technical Competencies:
The Quality Manager should demonstrate strong capability in:
- Microbiological and chemical hazard control in poultry processing
- Environmental monitoring programs (EMP)
- Shelf-life validation and product integrity testing
- Cold chain management and temperature control
- Allergen control (especially in further processing)
- Sanitation verification and cleaning validation
- Product traceability, recall, and mock recall execution
- Quality risk assessment and preventive controls
