The Bar Supervisor is responsible for the efficient and profitable operation of the bar outlet by ensuring excellent beverage service, product quality, guest satisfaction, and compliance with Seda Hotels' standards and policies.
The position provides hands-on supervision of daily bar operations, leads the bar team, supports beverage menu development, and performs mixology functions to ensure consistently high-quality cocktails and beverages. The Bar Supervisor also assists in achieving departmental revenue, cost, service quality, and guest satisfaction objectives.
KEY RESPONSIBILITIES
A. Bar Operations
- Supervise the day-to-day operations of the bar, ensuring smooth and efficient service.
- Ensure proper opening, closing, and daily operating procedures are consistently followed.
- Monitor bar readiness, cleanliness, organization, equipment, glassware, utensils, and supplies.
- Ensure proper mise en place and availability of beverages, garnishes, ingredients, and bar supplies.
- Monitor beverage presentation and service standards.
- Ensure compliance with established SOPs, sanitation, food safety, and safety standards.
- Coordinate with F&B, Kitchen, Stewarding, Housekeeping, Engineering, and other departments to address operational requirements.
B. Mixology & Beverage Quality
- Prepare and supervise the preparation of cocktails, mocktails, wines, beers, spirits, coffee, and other beverages.
- Ensure consistency in recipes, measurements, presentation, and serving standards.
- Demonstrate knowledge of classic and contemporary cocktails and appropriate beverage pairings.
- Assist in developing and improving cocktail and beverage menus based on guest preferences, trends, and business requirements.
- Recommend new beverages, signature cocktails, seasonal offerings, and promotional drinks.
- Conduct regular quality checks on beverages and ingredients.
- Ensure proper storage, handling, labeling, and rotation of alcoholic and non-alcoholic beverages.
C. Guest Experience
- Deliver personalized and attentive service to guests.
- Interact professionally with guests and recommend beverages based on their preferences.
- Handle guest inquiries, requests, and complaints promptly and professionally.
- Maintain positive relationships with regular guests and identify opportunities to enhance the guest experience.
- Ensure responsible service of alcoholic beverages in accordance with company policies and applicable regulations.
D. People Management & Supervision
- Lead, coach, and motivate bar associates to achieve service and operational standards.
- Conduct pre-shift briefings and communicate daily priorities, promotions, VIP guests, and operational concerns.
- Monitor attendance, grooming, punctuality, performance, and discipline of assigned associates.
- Provide on-the-job coaching and skills development, particularly in mixology and beverage service.
- Identify training needs and coordinate with the Training/HR team for appropriate development programs.
- Assist in performance evaluation and provide regular feedback to team members.
- Ensure proper staffing and deployment during operating hours.
E. Inventory & Cost Control
- Monitor beverage inventory levels and ensure adequate stock availability.
- Assist in conducting daily, weekly, and monthly beverage inventories.
- Monitor beverage requisitions, transfers, breakages, spoilage, and variances.
- Ensure proper portion control and adherence to standard recipes.
- Minimize beverage wastage and control operational costs.
- Report inventory discrepancies and unusual variances to the F&B Manager.
- Ensure proper handling and security of alcoholic beverages and other high-value items.
F. Sales & Revenue Generation
- Support the achievement of bar revenue and profitability targets.
- Promote signature cocktails, premium beverages, food pairings, and other F&B offerings.
- Identify opportunities to increase average check and beverage sales while maintaining guest satisfaction.
- Assist in implementing bar promotions, events, and special beverage programs.
- Monitor sales performance and provide recommendations to improve revenue.
G. Administration & Compliance
- Prepare and maintain required operational reports and records.
- Ensure compliance with hotel policies, F&B standards, HACCP/food safety requirements, sanitation, and occupational safety procedures.
- Ensure proper cash handling and adherence to established billing and payment procedures.
- Report equipment defects, maintenance concerns, incidents, and other operational issues promptly.
- Participate in departmental meetings, briefings, training programs, and hotel activities.
- Perform other duties and responsibilities as may be assigned by management.
III. JOB QUALIFICATIONS
Education
- Bachelor's degree or diploma in Hospitality Management, Hotel and Restaurant Management, Food & Beverage Management, or a related field is preferred.
Experience
- At least 2–3 years of relevant experience in bar operations, preferably in a hotel, resort, restaurant, or upscale bar environment.
- At least 1 year of supervisory or team-lead experience is preferred.
- Experience in mixology, cocktail preparation, beverage menu development, and bar inventory control is highly desirable.
